Stew with potatoes
(for 4 people)
650 grams (1.45 Lbs) pork fillet:
900 grams (2 Lbs) potatoes:
400 grams (14 oz) tinned tomatoes:
2 cloves of garlic:
1 sprig of sage:
1/2 cup (half cup) of red wine:
Extra virgin olive oil:
Salt and chilli powder (or pepper)
Cut into little pieces the meat and place it in a pan with 2 tablespoons of olive oil, let it fry gently well with the garlic over high heat for about 10 minutes, then pour the red wine and let it evaporate.:
Add the tomatoes and sage, the potatoes peeled and cut into chunks, adjust salt and pepper, cook for about 30 minutes and until the potatoes begin to crumble.
Add 2 tablespoon of olive oil and hot serve.
This is a very good recipe for many people, but not for vegetarians and vegans.
